About the role

  • Responsible for overall operations of all F&B departments and outlets.
  • Schedule, direct, supervise, train, and develop front of house staff.
  • Collaborate with back of house staff to ensure quality and timeliness of product.
  • Ensure guest satisfaction and serve as point of contact for guest and employee feedback.
  • Ensure compliance with department and company sales, regulations, policies, procedures, internal controls and government rules and regulations.
  • Develop and maintain high standards of safety and sanitation; ensure employees comply with health and food safety standards.
  • Manage inventory, requisitioning, ordering of food, beverages, equipment, and supplies.
  • Monitor food preparation, portion sizes, and overall presentation of food.
  • Develop promotions to increase outlet revenue and recommend strategies for revenue growth.
  • Require payment/comp authorization upon service; assist beverage staff in cash register balancing and authorize comp transactions.
  • Inspect supplies, equipment, and work areas; maintain budgets and payroll records and review financial transactions.
  • Establish standards for personnel performance and customer service; optimize profits by controlling food and labor cost daily.
  • Attend periodic meetings and training sessions; promote positive public and employee relations.

Requirements

  • High school diploma or equivalent or GED required.
  • Eight (8) years of food and beverage experience, with Five (5) years in a supervisory capacity.
  • Proficient with Microsoft Office Suite or related software.
  • Strong POS operational and programming experience.
  • Knowledge of government health, hotel, or food service regulations.
  • Proficient in operational financial management accountability and budgeting.
  • Ability to secure and maintain NE Gaming License.
  • Certifications: Food Handler, ServSafe, TIPS Alcohol Certification.
  • Ability to sell/serve alcoholic beverages and comp authorization responsibilities.
  • Ability to work varying schedules to reflect business needs of the property.
