About the role
- Responsible for daily kitchen operations and back-of-house management
- Manage food preparation and recipe execution according to CJ Foodville standards
- Conduct thorough line checks at the beginning of every shift
- Manage food cost, BOH labor cost, set pars, ordering, inventory, scheduling, and maximize yield
- Recruit, train, and develop BOH employees
- Work closely with GM and CJ Foodville team from Korea to develop and implement menu items
- Educate and train employees about safety and sanitation
- Support GM and act as GM when other managers are not present
- Responsible for all daily restaurant operations including opening and closing and overall P&L
- Administer restaurant supplies and maintain proper inventory levels
- Communicate and resolve issues with customers, employees, and vendors
- Work with GM to develop and maintain effective marketing plans
Requirements
- At least 4 years of full-service dining experience including management experience
- Associates Degree in Hospitality preferred
- NYC Food Protection Certificate
- Spanish or Korean skill a plus
- Experience hiring, training, and developing back-of-house employees
- Knowledge of food preparation, food safety, and sanitation
- Experience managing food cost, inventory, ordering, and BOH labor cost
- Ability to conduct line checks and execute recipes according to standards
- Experience with P&L and store operations
- Ability to act as General Manager when other managers are not present
