About the role

  • Independently determine grape ripeness, including assessment of physiological maturity, laboratory analyses (Oechsle (°Oe), pH measurement, acidity determination) and sensory evaluation of grape must
  • Independently monitor the progress of alcoholic fermentation and perform sensory checks, including assessment of whether to initiate appropriate measures
  • Monitor spontaneous fermentations by identifying different yeast strains (microscopic examination)
  • Laboratory work: analyses of acidity, sugar and pH levels, as well as microscopic examinations
  • Perform quality controls (grape assessment)
  • Conduct fermentation analyses

Requirements

  • Completed Vordiplom (intermediate diploma) in Food Process Engineering or Food Chemistry desirable
  • Trained chemical laboratory technician (Chemielaborant) or equivalent qualification
  • Experience in laboratory work and microscopy
