About the role
- Independently determine grape ripeness, including assessment of physiological maturity, laboratory analyses (Oechsle (°Oe), pH measurement, acidity determination) and sensory evaluation of grape must
- Independently monitor the progress of alcoholic fermentation and perform sensory checks, including assessment of whether to initiate appropriate measures
- Monitor spontaneous fermentations by identifying different yeast strains (microscopic examination)
- Laboratory work: analyses of acidity, sugar and pH levels, as well as microscopic examinations
- Perform quality controls (grape assessment)
- Conduct fermentation analyses
Requirements
- Completed Vordiplom (intermediate diploma) in Food Process Engineering or Food Chemistry desirable
- Trained chemical laboratory technician (Chemielaborant) or equivalent qualification
- Experience in laboratory work and microscopy
