About the role
- Production manager (food service) in cook‑chill production (liaison froide) — 160 plated meals at lunch and dinner plus a self‑service lunch for 200 CTS
- Manage a team of 15 people (scheduling, organization, annual reviews, hiring)
- Ordering (food and non‑food) (FTBE software currently being replaced)
- Organize production (cook‑chill)
- Maintain approval documentation (HACCP, PMS - Sanitary Management Plan)
Requirements
- Bac+2 level or significant experience in collective/institutional catering (sanitary requirements)
- Proficiency in HACCP and hygiene protocols (management of the approval file)
- Expertise in cook‑chill (liaison froide) production
- Stock management (FTBE software)
- Good culinary knowledge (pureed dishes, special diets, etc.)
