About the role

  • Production manager (food service) in cook‑chill production (liaison froide) — 160 plated meals at lunch and dinner plus a self‑service lunch for 200 CTS
  • Manage a team of 15 people (scheduling, organization, annual reviews, hiring)
  • Ordering (food and non‑food) (FTBE software currently being replaced)
  • Organize production (cook‑chill)
  • Maintain approval documentation (HACCP, PMS - Sanitary Management Plan)

Requirements

  • Bac+2 level or significant experience in collective/institutional catering (sanitary requirements)
  • Proficiency in HACCP and hygiene protocols (management of the approval file)
  • Expertise in cook‑chill (liaison froide) production
  • Stock management (FTBE software)
  • Good culinary knowledge (pureed dishes, special diets, etc.)
