About the role
- Lead and manage the production and storeroom activities of Vulcania’s Food Service Department.
- Ensure managerial continuity of the Food Service Department (6 to 75 staff) in the event of simultaneous absence of senior management.
- Organize, coordinate and oversee staff work in the production and storeroom areas.
- Specifically lead a kitchen brigade that can count up to 35 people depending on the season.
- Ensure the operation and quality of the output from the various production units.
- Ensure operational processes are correctly executed and that HACCP rules are respected.
- Manage the different units and create technical/specification sheets.
- Develop “signature” dishes that contribute to an immersive visitor experience.
- Manage orders and approve purchases.
Requirements
- Proven experience in foodservice, specifically in production
- Experience in purchasing, storeroom management and supplier relations
- Hands-on, autonomous, organized and rigorous
- Significant experience in tourist/visitor catering and/or brasserie-style operations, managing peak periods and large fluctuations in production volume depending on opening periods
- Degree or background in Culinary Arts / Hospitality & Catering / Foodservice Management with substantial professional experience in the role
